Four Ingredient Movie Theater Popcorn (healthy)!
Popcorn is a vibe, okay. I forgot how amazing popcorn really was for YEARS after I left NY where my dad would make it on the stove as a lil’ after school snack.
BUT since we are living (dare i say THRIVING), having a popcorn recipe that isn’t chalk-full of salt and oil is definitely key for me to eat more and feel gross less. Ya know what I mean.
This recipe gives me a class movie theater popcorn vibe with a gorgeous twist of the truffle zest which is just chefs kiss.
I had a traditional tabletop popcorn maker that had way too many parts and made my popcorn lack that crunch that we all crave. I was skeptical about this $10 microwave air popper but, let me just tell you, I take it allllll back. Just go get it and have popcorn in 3 minutes, kay?
Now here’s the kicker. This coconut oil is what MAKES this. First of all, I don’t like to taste coconut oil on popcorn (coconut oil makes me think of either South Asian savory food or sweets). I searched high and low for a butter flavored oil that didn’t have so many artificial ingredients cause it’s 2022 and we need to take care of our health above all. This oil is organic check, coconut oil is a great source of fatty acids check, and it’s naturally flavored to taste like butter check check check. Guys, I can’t even taste the coconut AT ALL. Done and done, it’s this one.
Pink Himalayan salt is arguably the healthiest out of all salts and it’s kosher so the flavor is subtle and buildable. You don’t get that metallic aggressive flavor like with regular table salt.
Alright, let me stop going on and on about how great this is and just give you the simple recipe cause that’s what you came here for:
Fill the bottom of the microwave popcorn popper with as many kernels as you’d like regarding the two lines on the inside of the popper. Place the silicone lid on top and follow the directions according to your microwave and the instructions for the popper (2-3 minutes should do it).
Take your steamin’ popcorn out once done and take off the lid to release some steam. In the meantime, place about 1 tbsp of coconut oil in a microwave safe container and microwave for about 30-45 seconds until completely melted.
Drizzle half of the coconut oil over the popcorn. Towards the edge of the popcorn bowl carefully turn over the popcorn so some of the kernels towards the bottom and on top. Drizzle remaining oil on the plain kernels. Repeat the process with several dashes of truffle zest (you don’t need a lot for impactful flavor), and salt.
