Chef Chris’ Beloved Mexican Bowl
Now, this might not be world famous but it’s pretty famous in our household. If it makes my boyfriend’s Top 5 all-time favorite recipe list, I call it a winner considering he’s P.I.C.K.Y.
I’ve made it vegan but you can swap out ingredients as you see fit. I HIGHLY recommend buying ingredients that are already infused with spices so you can get the most flava possible. I use vegetarian refried beans and add taco seasoning to the meat for that.
Oh also, I included measurements for spices and whatnot but I honestly just eyeball ‘em.
Okay, here we go!
Vegan Mexican Bowl
Ingredients:
1 cup white rice, cooked
1 tbsp olive oil or avocado oil
1 medium yellow onion, sliced
1 green bell pepper, sliced
1/2 tsp garlic powder
1/2 tsp cumin powder, plus 1/4 tsp for guacamole
1/2 tsp smoked paprika powder
1/4 tsp salt
1/8 tsp onion powder (optional)
1 package Beyond Ground Meat
1 pack Siete Taco Seasoning
1/2 cup chunky salsa
2 ripe avocados
1/2 cup chopped cilantro (1/4 for rice, 1/4 for guacamole)
vegetarian refried beans (I used Amy’s organic vegetarian refried beans)
small head butter lettuce, chopped
1/2 red onion, diced (optional)
